Stage One grinds your knife with coarse diamond sharpening wheels. The deal here is the same as most other electric knife sharpeners: This stage should only be used on very dull knife edges to help bring them back to their cutting prime.
Stage Two is to grind finely. If you are just ‘touching up’ your knives for general maintenance, then you would start here and skip stage one altogether.

Each of these abrasive stages is increasingly fine, but for the majority of the time, you’ll only really be concerned with the latter two stages. Like so many other Chef’s Choice electric knife sharpeners, with the M130 knives are sharpened easily and incredibly quickly. Its value for money comes through with the fact that this sharpener can produce different edges, depending on how you use the three different stages on offer on the Chef’s Choice M130.
Combine stages one and two create what Chef’s Choice call the ultimate fine edge, and creates edges that are perfect for precise cutting. However, the real sharpening ability of this top electric fillet knife sharpener is best seen in its non-powered second stage. More acute and coarser, this stage will cut more aggressively to work a good alignment and straight edge. You’ll have to be careful not to exert too much pressure as you apply the knife, but this stage, in particular, does a great job on most knives.
